Why Milkfish
The brewing of the soup base is a laborious endeavour; the soul of the nourishing soup comes from the fish’s gelatinous belly fat, pork bones and chicken, which after hours of boiling, skimming and reducing, distill into a creamy consistency with a delicate and sweet flavour.
The milky emulsion and sweet taste inherent in milkfish also eliminate the need to add any milk, keeping it accessible to people with dairy sensitivities.

The selection of accompanying ingredients in Milkfish’s signature broth bowl proves to be equally important and has been carefully considered; a choice of fresh fish options, along with a whole prawn, clams, housemade minced pork patty, tofu and vegetables.
Another menu highlight is the grilled milkfish belly that is creamy, juicy and tender and goes exceptionally well with the healthy base options of multigrain rice and brown rice vermicelli.
